• Our 2021 Repechage Red Wine is a combination of two lots, our Napa Valley Merlot and Napa Valley Cabernet Sauvignon. Both were hand picked and hand sorted prior to being destemmed and crushed for fermentation.

Both lots utilized a combination of BM4x4 and F15 oenological yeasts and barreled down in French oak barrels. For barrel aging we utilized a combination of Gamba, Alain Fouquet and Sylvain cooperages.

Over the course of twenty-two months of barrel aging we opted to set aside a handful these barrels to craft this wine which became a blend of 57% Merlot and 43% Cabernet Sauvignon.

This vintage was bottled on April 30th, 2022 with 15.22% alcohol, 7.3 g/L total acidity and a pH of 3.79. Sulfites we adjusted to a level of 30ppm (parts per million) prior to bottling to inhibit microbial activity. Sugar free (less than 0.23 grams per bottle). No filtering, fining agents or animal products were used in the production of this wine.
