Fermented with X16 oenological yeasts.
Pressed directly to barrel and fermented is small lots.
Aged in 100% new barrels (Nadalie Perle Blanche French Oak and Gamba Acacia barrels) for 18 months and another 9 months in bottle.
Total Acidity: 6.60 g/L with a pH of 3.31

Filtered prior to bottling using Crossflow techology.
